Du curry ?"},"content":{"rendered":"<p><\/p>\n\n\n\n<p>Avec plus de 65 nationalit\u00e9s autour de la table, il y a une incroyable vari\u00e9t\u00e9 de go\u00fbts \u00e0 satisfaire, et la t\u00e2che peu enviable de trouver une nourriture qui passionne tout le monde incombe \u00e0 une \u00e9quipe dirig\u00e9e par Mme Sonia Bel-Hadj, directrice du restaurant de l&#039;Aiglon.<\/p>\n\n\n\n<p>\u00ab Il est parfois difficile de pr\u00e9dire ce qui sera populaire \u00bb, explique Mme Bel-Hadj, qui admet que son \u00e9quipe a appris au fil des ans \u00e0 r\u00e9duire un peu la vari\u00e9t\u00e9. \u00ab Nous \u00e9coutons davantage et trouvons des compromis. Nous pensions qu&#039;il fallait varier les menus en permanence, mais les \u00e9tudiants n&#039;ont pas peur de r\u00e9p\u00e9ter. Les bons ingr\u00e9dients, servis de mani\u00e8re simple, sont souvent les plus populaires. \u00bb<\/p>\n\n\n\n<p>\u00ab L\u2019autre jour, le filet mignon \u00e0 la sauce aux morilles a battu le bagel au saumon, ce qui \u00e9tait surprenant. Nous aimons essayer de nouvelles choses et si \u00e7a ne marche pas, nous essayons autre chose. \u00bb Le papet vaudois (poireaux, pommes de terre et saucisses), un plat suisse tr\u00e8s appr\u00e9ci\u00e9, n\u2019a pas eu beaucoup de succ\u00e8s. \u00ab Les \u00e9tudiants nous ont dit qu\u2019ils voulaient avoir leur mot \u00e0 dire sur ce qu\u2019ils mangeaient \u00bb, explique Kabir (Alpina, 2025), membre du conseil \u00e9tudiant. \u00ab Nous avons donc dress\u00e9 une liste de 25 plats pr\u00e9f\u00e9r\u00e9s et, une fois par semaine, les \u00e9tudiants peuvent voter pour celui qui sera servi. Le poulet katsu est en t\u00eate. Viennent ensuite le poulet r\u00f4ti, le fish and chips, la pizza, le hamburger, les bouch\u00e9es de poulet ou de fromage et les petits pains bao. La nourriture a toujours \u00e9t\u00e9 bonne, mais elle suscite beaucoup plus d\u2019enthousiasme aujourd\u2019hui. \u00bb<\/p>\n\n\n\n<p>Outre l\u2019ampleur de cette op\u00e9ration, il s\u2019agit d\u2019une op\u00e9ration d\u00e9licate, qui doit concilier les besoins des jeunes, la nutrition et la sant\u00e9, ainsi que des consid\u00e9rations telles que la pression du temps et la durabilit\u00e9. Pour livrer \u00e0 ces bouches affam\u00e9es \u2013 1 000 repas par jour, sept jours sur sept \u2013 une \u00e9quipe de 17 sp\u00e9cialistes g\u00e8re une op\u00e9ration avec brio, \u00e2me et pr\u00e9cision militaire. \u00ab Mais il s\u2019agit de bien plus que de nourrir les \u00e9l\u00e8ves \u00bb, explique Mme Bel-Hadj. \u00ab C\u2019est leur maison, nous voulons donc qu\u2019ils en profitent. \u00bb<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"800\" height=\"533\" src=\"https:\/\/stage.swisslearning.com\/wp-content\/uploads\/2024\/09\/22Aiglon_LRspreads_Page_11.webp\" alt=\"\" class=\"wp-image-12205\" srcset=\"https:\/\/stage.swisslearning.com\/wp-content\/uploads\/2024\/09\/22Aiglon_LRspreads_Page_11.webp 800w, https:\/\/stage.swisslearning.com\/wp-content\/uploads\/2024\/09\/22Aiglon_LRspreads_Page_11-300x200.webp 300w, https:\/\/stage.swisslearning.com\/wp-content\/uploads\/2024\/09\/22Aiglon_LRspreads_Page_11-768x512.webp 768w, https:\/\/stage.swisslearning.com\/wp-content\/uploads\/2024\/09\/22Aiglon_LRspreads_Page_11-18x12.webp 18w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>OP\u00c9RATION CINQ \u00c9TOILES<\/strong><\/h4>\n\n\n\n<p>Comme c\u2019est la coutume en Suisse, le d\u00e9jeuner est le repas principal de la journ\u00e9e. Les \u00e9l\u00e8ves commencent \u00e0 arriver par groupe d\u2019\u00e2ge \u00e0 12h25 pour le premier service, suivi d\u2019un second une demi-heure plus tard. \u00ab C\u2019est un lieu convivial et dynamique \u00bb, explique Andy Croft, directeur des op\u00e9rations d\u2019Aiglon. \u00ab Il y a une v\u00e9ritable effervescence, et je suis s\u00fbr que cela ne fera que s\u2019am\u00e9liorer dans le nouveau campus de Moghadam qui ouvrira en 2025. Il y a cependant des r\u00e8gles : pas de chapeau, pas de t\u00e9l\u00e9phone, pas d\u2019ordinateur portable, pas de short. Bien s\u00fbr, il serait plus facile de pr\u00e9parer des sandwichs, mais nous pensons qu\u2019il est important, dans une journ\u00e9e aussi charg\u00e9e, de s\u2019arr\u00eater, de s\u2019asseoir et de manger correctement. \u00bb<\/p>\n\n\n\n<p>Avant de s\u2019asseoir, les \u00e9l\u00e8ves choisissent l\u2019un des trois postes, o\u00f9 ils se verront servir des plats traditionnels, du monde ou v\u00e9g\u00e9tariens, parmi un menu qu\u2019ils ont vu sur une application plus t\u00f4t dans la journ\u00e9e. Le personnel sait quels \u00e9l\u00e8ves ont des allergies et veille \u00e0 ce qu\u2019ils fassent des choix sains. \u00ab Les repas ont une fonction pastorale \u00bb, explique M. Croft. \u00ab L\u2019alimentation et le bien-\u00eatre sont li\u00e9s. L\u2019astuce consiste \u00e0 \u00e9quilibrer les trois options du menu, de sorte que chacune soit aussi attrayante. \u00bb<\/p>\n\n\n\n<p>Il y a bien s\u00fbr des d\u00e9fis impr\u00e9visibles, comme l&#039;arriv\u00e9e soudaine de 50 invit\u00e9s inattendus, comme cela s&#039;est produit r\u00e9cemment. \u00ab Mais ce n&#039;est pas un probl\u00e8me : nous g\u00e9rons ici un \u00e9tablissement cinq \u00e9toiles. \u00bb<\/p>\n\n\n\n<p>L&#039;\u00e9quipe de cuisine s&#039;inspire de la diversit\u00e9 de son personnel. \u00ab Le sous-chef Benji Rocha s&#039;int\u00e9resse aux nouvelles tendances asiatiques et nos enfants adorent tout ce qui est asiatique. Le poulet karaage, le b\u0153uf bulgogi, les dim sum et les petits pains bao. M. German Velandia Clavijo est sud-am\u00e9ricain et il fait des arepas, une p\u00e2te \u00e0 base de ma\u00efs avec diff\u00e9rentes garnitures. Je suis fran\u00e7ais, donc j&#039;aime la cuisine fran\u00e7aise. \u00bb<\/p>\n\n\n\n<p>\u00ab Nous avons aussi un p\u00e2tissier, qui est formidable \u00bb, explique Mme Bel-Hadj. \u00ab M. Lilian Menoret fait des mille-feuilles, des \u00e9clairs au chocolat, de la cr\u00e8me br\u00fbl\u00e9e et du crumble \u2013 tous les classiques. Mais aussi du sorbet au gingembre avec de la glace \u00e0 la noix de coco pour le Nouvel An lunaire. Et bien s\u00fbr, il fait ses propres glaces. \u00bb<\/p>\n\n\n\n<p>Depuis 2015, le groupe SV est charg\u00e9 de fournir les repas d\u2019Aiglon, sous l\u2019\u0153il attentif de M. Rodrigue Benoit. \u00ab Notre fondatrice, Else Z\u00fcblin-Spiller, pensait qu\u2019un esprit sain allait de pair avec un corps sain, et c\u2019est ainsi qu\u2019elle a fourni des repas nutritifs aux soldats des casernes suisses \u00bb, explique M. Benoit. \u00ab SV est n\u00e9 de l\u00e0, et il nous a sembl\u00e9 tout naturel de travailler avec Aiglon. \u00bb<\/p>\n\n\n\n<p>\u00ab Nous privil\u00e9gions les l\u00e9gumes et la viande frais et locaux. 90 % de ce que nous proposons est cultiv\u00e9 en Suisse, \u00e0 l\u2019exception des bananes, qui sont en tr\u00e8s grande quantit\u00e9 ! Les aliments frais produisent en effet plus de d\u00e9chets alimentaires, notamment les \u00e9pluchures et les ar\u00eates. Nous servons donc des assiettes de taille optimale, et les clients peuvent en prendre une deuxi\u00e8me s\u2019ils ont encore faim. Nous voulons voir des assiettes propres ! C\u2019est la satisfaction ultime. \u00bb M. Benoit propose \u00e9galement des formations sp\u00e9cialis\u00e9es, par exemple sur la cuisine pakistanaise, et fournit chaque mois une liste d\u2019ingr\u00e9dients de saison \u00e0 partir desquels ils \u00e9laborent leurs menus.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>TOUT SUR LA NOURRITURE<\/strong><\/h4>\n\n\n\n<p>Le d\u00eener est plus d\u00e9contract\u00e9, avec deux choix de plats r\u00e9confortants, comme une tourte au fromage ou une pizza, et les \u00e9tudiants mangent en groupe. \u00ab Le d\u00eener est beaucoup plus d\u00e9tendu \u00bb, convient M. Croft. \u00ab Les filles du Cerf arrivent \u00e0 18 heures, puis 20 minutes plus tard, une autre maison arrive. \u00bb<\/p>\n\n\n\n<p>\u00ab Le d\u00eener est plut\u00f4t un moment en famille \u00bb, explique Kabir. \u00ab Vous mangez avec vos parents et vos tuteurs, vous pouvez donc faire le point sur la situation ou parler \u00e0 un tuteur de quelque chose que vous avez en commun, comme la musique. Comme c&#039;est votre maison, les \u00e2ges sont mixtes, vous pouvez demander de l&#039;aide \u00e0 un \u00e9l\u00e8ve de terminale sur un sujet dont vous ne voulez pas parler \u00e0 un professeur. Nous appelons Alpina \u00ab la Confr\u00e9rie \u00bb. \u00bb<\/p>\n\n\n\n<p>Le petit-d\u00e9jeuner est le repas pr\u00e9f\u00e9r\u00e9 de Kabir, ou plut\u00f4t, il le serait s&#039;il avait le temps de le manger ! \u00ab Nous proposons autant de vari\u00e9t\u00e9 que possible \u2013 \u0153ufs brouill\u00e9s, bacon, haricots, gaufres, cr\u00eapes \u2013 mais nous savons aussi que certains \u00e9l\u00e8ves ont besoin de faire la grasse matin\u00e9e de temps en temps \u00bb, explique Mme Bel-Hadj. \u00ab L&#039;\u00e9cole permet \u00e9galement aux maisons de sauter la m\u00e9ditation toutes les deux semaines pour s&#039;asseoir et prendre un bon petit-d\u00e9jeuner, ce qui est toujours bien accueilli. \u00bb<\/p>\n\n\n\n<p>Mme Bel-Hadj et son \u00e9quipe s&#039;occupent \u00e9galement des \u00e9v\u00e9nements sp\u00e9ciaux de l&#039;\u00e9cole. \u00ab La remise des dipl\u00f4mes est mon \u00e9v\u00e9nement pr\u00e9f\u00e9r\u00e9 \u00bb, dit-elle. \u00ab Nous nous occupons de tout nous-m\u00eames. Nous essayons de cr\u00e9er un menu amusant et de le planifier des semaines \u00e0 l&#039;avance. Tout le monde est habill\u00e9 sur son trente et un et tout l&#039;endroit est d\u00e9cor\u00e9. L&#039;ambiance est fantastique. \u00bb<\/p>\n\n\n\n<p>Mais en fin de compte, c&#039;est la nourriture qui compte, et l&#039;\u00e9quipe de cuisine est fi\u00e8re de ce qu&#039;elle a accompli. \u00ab Ce que je pr\u00e9f\u00e8re, c&#039;est recevoir un e-mail qui dit simplement : &quot;Merci.
