Sonia Bel-Hadj, Gerente del Restaurante de Aiglon.<\/p>\n\n\n\n<p>&quot;Puede resultar dif\u00edcil predecir qu\u00e9 ser\u00e1 popular&quot;, dice Bel-Hadj, quien admite que una cosa que su equipo ha aprendido a lo largo de los a\u00f1os es, de hecho, disminuir un poco la variedad. &quot;Escuchamos m\u00e1s y llegamos a acuerdos. Nos gusta probar cosas nuevas y, si no funciona, probamos otra cosa\u201d. Por ejemplo, el favorito de los suizos, el papet Vaudois (puerro, patata y salchichas), no tuvo \u00e9xito. \u201cLos estudiantes nos dijeron que quer\u00edan tener m\u00e1s voz y voto en lo que com\u00edan\u201d, dice el miembro del Consejo Estudiantil Kabir (Alpina, 2025). \u201cAs\u00ed que recopilamos una lista de 25 de los platos favoritos y ahora, una vez a la semana, los estudiantes pueden votar cu\u00e1l se sirve. El n\u00famero uno es el pollo katsu. Luego est\u00e1n el pollo asado, el pescado y las patatas fritas, la pizza, las hamburguesas, los bocaditos de pollo o queso y los bollos bao. La comida siempre ha sido buena, pero ahora hay mucho m\u00e1s entusiasmo en torno a ella\u201d.<\/p>\n\n\n\n<p>Adem\u00e1s de ser una operaci\u00f3n de gran envergadura, se trata de una operaci\u00f3n delicada, en la que hay que encontrar un equilibrio entre los paladares de los j\u00f3venes, la nutrici\u00f3n y la salud, as\u00ed como consideraciones como la presi\u00f3n del tiempo y la sostenibilidad. Los estudiantes comienzan a llegar por curso a las 12.25 h para el primer turno y, aproximadamente, para el segundo, media hora m\u00e1s tarde. \u201cEs un ambiente comunitario y din\u00e1mico\u201d, afirma Andy Croft, director de operaciones de Aiglon. \u201cHay mucho ambiente y estoy seguro de que mejorar\u00e1 en el nuevo campus de Moghadam, que se inaugurar\u00e1 en 2025. Sin embargo, hay reglas: no se permiten gorras, tel\u00e9fonos, computadoras port\u00e1tiles ni pantalones cortos. Por supuesto, ser\u00eda m\u00e1s f\u00e1cil preparar s\u00e1ndwiches, pero creemos que es importante, en un d\u00eda tan ajetreado, hacer una pausa, sentarse y comer adecuadamente\u201d.<\/p>\n\n\n\n<p>Antes de sentarse, los estudiantes eligen una de tres estaciones, donde se les servir\u00e1 comida tradicional, internacional o vegetariana de un men\u00fa que han visto en una aplicaci\u00f3n ese mismo d\u00eda. El personal sabe qu\u00e9 estudiantes tienen alergias y est\u00e1 atento para ayudarlos a tomar decisiones saludables. &quot;Las comidas tienen una funci\u00f3n pastoral&quot;, dice Croft. &quot;La comida y el bienestar est\u00e1n vinculados. El truco es equilibrar las tres opciones del men\u00fa, para que todas sean igualmente atractivas&quot;.<\/p>\n\n\n\n<p>Por supuesto, existen desaf\u00edos impredecibles, como la llegada repentina de 50 hu\u00e9spedes inesperados, como ocurri\u00f3 recientemente. \u201cPero no es un problema: aqu\u00ed tenemos un hotel de cinco estrellas\u201d.<\/p>\n\n\n\n<p>El equipo de cocina se inspira en su personal diverso para elaborar el men\u00fa. \u201cEl sous-chef, el se\u00f1or Benji Rocha, est\u00e1 al tanto de las nuevas tendencias asi\u00e1ticas y a nuestros hijos les encanta todo lo asi\u00e1tico: karaage de pollo, bulgogi de ternera, dim sum y bollos bao. El se\u00f1or Germ\u00e1n Velandia Clavijo es sudamericano y hace arepas, una masa de ma\u00edz con diferentes aderezos. Soy franc\u00e9s, as\u00ed que me gusta la comida francesa\u201d.<\/p>\n\n\n\n<p>\u201cTambi\u00e9n tenemos un pastelero que es fant\u00e1stico\u201d, comenta Bel-Hadj. \u201cEl se\u00f1or Lilian Menoret prepara milhojas, \u00e9clairs de chocolate, cr\u00e8me br\u00fbl\u00e9e y crumble, todos los platos favoritos. Pero tambi\u00e9n sorbete de jengibre con helado de coco para el A\u00f1o Nuevo Lunar. Y, por supuesto, \u00e9l mismo elabora su propio helado\u201d.<\/p>\n\n\n\n<p>Desde 2015, SV Group se encarga de proporcionar las comidas de Aiglon, bajo la atenta mirada del Sr. Rodrigue Benoit. &quot;Nuestra fundadora, Else Z\u00fcblin-Spiller, pensaba que una mente sana iba de la mano con un cuerpo sano, por lo que proporcion\u00f3 comidas nutritivas a los soldados en los cuarteles suizos&quot;, dice el Sr. Benoit. &quot;SV naci\u00f3 de ah\u00ed, y nos pareci\u00f3 muy natural trabajar con Aiglon.<\/p>\n\n\n\n<p>\u201cDamos prioridad a las verduras y la carne locales frescas. Benoit tambi\u00e9n ofrece formaci\u00f3n especializada (en comida pakistan\u00ed, por ejemplo) y proporciona una lista de ingredientes de temporada cada mes, a partir de la cual elaboran sus men\u00fas.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>TODO SOBRE LA COMIDA<\/strong><\/h4>\n\n\n\n<p>La cena es m\u00e1s relajada, con dos opciones de comida casera, como pastel de carne o pizza, y los estudiantes comen en grupos de la casa. \u201cLa cena es mucho m\u00e1s relajada\u201d, coincide Croft. \u201cLas chicas de Le Cerf pueden llegar a las 6 de la tarde y, 20 minutos despu\u00e9s, aparece otra casa\u201d.<\/p>\n\n\n\n<p>\u201cLa cena es m\u00e1s como un momento familiar\u201d, dice Kabir. \u201cComes con tus padres y tutores, as\u00ed que puedes ponerte al d\u00eda sobre c\u00f3mo van las cosas o hablar con un tutor sobre algo que teng\u00e1is en com\u00fan, como la m\u00fasica. Como es tu casa, hay edades mixtas, as\u00ed que puedes pedirle ayuda a un alumno de 12.\u00ba a\u00f1o sobre algo de lo que no quieres hablar con un profesor. Llamamos a Alpina &#039;la Hermandad&#039;\u201d.<\/p>\n\n\n\n<p>Luego est\u00e1 el desayuno, la comida favorita de Kabir (o m\u00e1s bien lo ser\u00eda, si tuviera tiempo para comerla). \u201cOfrecemos tanta variedad como podemos (huevos revueltos, tocino, frijoles, gofres, panqueques), pero tambi\u00e9n reconocemos que algunos estudiantes necesitan dormir un poco m\u00e1s de vez en cuando\u201d, dice Bel-Hadj. \u201cLa escuela tambi\u00e9n permite que las casas se salten la meditaci\u00f3n cada dos semanas para sentarse a tomar un desayuno bien cocinado, y eso siempre es bien recibido\u201d.<\/p>\n\n\n\n<p>Bel-Hadj y su equipo tambi\u00e9n se encargan de los eventos especiales de la escuela. \u201cMi evento favorito es la graduaci\u00f3n\u201d, afirma. \u201cLo hacemos todo nosotros mismos. Intentamos elaborar un men\u00fa divertido y lo planificamos con semanas de antelaci\u00f3n. Todos est\u00e1n vestidos elegantemente y todo el lugar est\u00e1 decorado. Es un ambiente fant\u00e1stico\u201d.<\/p>\n\n\n\n<p>Pero, en definitiva, lo importante es la comida, y el equipo de cocina est\u00e1 orgulloso de lo que consigue. \u201cLo que m\u00e1s me gusta\u201d, afirma Croft, \u201ces recibir un correo electr\u00f3nico que dice simplemente: &#039;Gracias.
